Drove by the location of Tucson’s newest ice cream store today.
What sets the Screamery apart from other ice cream shops is they will be pasteurizing their own cream. The first in Arizona. The owner Kenny Sarnoski will infuse the flavors during the pasteurization, heating the flavorings with the cream, milk, sugar and eggs to 155 degrees for 30 minutes. The mixture is then put in a cold bath for about an hour to chill to 50 degrees before it’s refrigerated for up to 24 hours where “all the sciencey stuff happens” to infuse the flavors, he said. Look at these cute stools. The store is opening July 12th with 16 flavors, such as cotton candy, made-from-scratch salted caramel, Sonoran chocolate flecked with chile flakes, Mudpie made with whole, steeped coffee beans and of course, vanilla, chocolate and strawberry.
